How to cook:

  1. Pour 1-1.5 cups of water into a saucepan and bring to a boil. Then add dried fruits (raisins and a little dried apricots) and boil for 5-7 minutes. Then take out the dried fruits and place them in a blender along with the peeled nuts. Grind.

After the beep, add raisins and wait until ready. Remove the cake from the mold and wait until it cools completely.

To bake such a low-calorie Easter cake, you need to collect the following ingredients:

  • 250 ml milk 1%;
  • 30 grams of sour cream;
  • a pack of dry yeast;
  • 4 eggs;
  • 180 g sugar;
  • 200 g of cottage cheese;
  • 320 g flour;
  • 100 g raisins;
  • 100 grams of dried apricots;
  • a packet of vanillin.

Heat the milk and dissolve dry yeast, a spoonful of sugar in it and leave for 20 minutes.

In a separate bowl, beat eggs and sugar vigorously. Add sour cream and cottage cheese to the resulting mixture, then mix everything with a mixer. Add soaked raisins.

By this time, the yeast should have already risen. This means that they can be sent to the general mixture.

Also add vanilla for flavor, and then gradually add flour one spoon at a time, stirring vigorously. The structure of the dough should remain viscous.

Easter is baked at a temperature of 180˚ - 200˚C until ready.

With gelatin

  1. Gelatin (10 g) is poured into 40 ml of water and left for 30 - 40 minutes to swell.

  7. Place a special bowl under the mold to allow excess liquid to drain there.
  8. Place the formed Easter cake in the refrigerator under a press for 5 hours, after which you can take it out and decorate it at your discretion.

Sugarless

This cake can be baked as follows:

  1. 25 grams of fructose are diluted in 200 ml of water.
  2. Chopped dried apricots (15 g) are combined with fructose and heated over medium heat for about 5 minutes. Next, when it cools down, it should be ground in a blender along with 15 grams of nuts.
  3. Rubbed through a fine sieve, 9% cottage cheese (500 g) is combined with the remaining fructose and half the mass that was formed in the blender.
  4. Line the chosen form for cottage cheese cake with cling film and place the prepared mixture in a heap. Make a depression in it and pour the remaining part of the nut mixture in the blender into the resulting channel, cover it with cottage cheese on top.
  5. After this, put the cake in the refrigerator for 12 hours, and then you can put it on the table.

With bran

Composition of products for the dough:

  • 5 large spoons of warm milk 1.5%;
  • 5 grams of dry yeast;
  • 3 tablets of sweetener, crushed into powder.

To prepare the dough:

  • 4 eggs;
  • 50 grams of oat bran;
  • 60 g soft cottage cheese 0%;
  • 10 grams of corn starch;
  • 10 grams of skimmed milk powder 1.5% (COM);
  • 10 g poppy seeds;
  • vanilla, salt and sugar substitute to taste.

Dilute the dough from the listed products and let it stand for 15 minutes in a warm place.

The dough is mixed in the following sequence:

4 yolks + oat bran + corn starch + SOM + poppy seeds + vanillin + salt + + sourdough.

Then beat 4 egg whites into a thick foam and add them to the dough, gently mixing them in with wide movements.

Leave the finished dough in a warm place for 15 minutes, then distribute it into molds and bake over low heat for 50 - 60 minutes.

Dietary cake made from oatmeal

  1. Preparing oatmeal cake begins with soaking 50 grams of raisins and 30 grams of prunes in boiling water.
  2. As a future impregnation, you will need to brew green tea with lemon.
  3. Then beat 2 eggs and add 20 grams of olive oil, 50 ml of orange oil, 90 ml of cold water and mix.
  4. Gradually add 175 grams of oatmeal and 5 grams of baking powder, mix everything well again to obtain a homogeneous mass.

  6. Bake at 180˚C.

  6. Place the resulting dough into greased molds, a little more than half.
  7. Bake on the lowest heat for 50 - 60 minutes. Do not open the oven while baking the cakes so that the dough does not settle.

Dietary Easter cake according to Dukan

  1. First you need to prepare the dough: in a glass bowl, mix 1 small spoon of yeast, 3 grams of sweetener, vanilla on the tip of a knife and 30 ml of warm milk.
  2. The yeast must be completely dissolved; for this, the mixture must be left for a few minutes.
  3. Next add milk powder (20 g).
  4. Place the dough near a warm stove and cover it to allow the reaction to take place.
  5. Now you need to grind 35 grams of oat bran in a coffee grinder.
  6. Then in a bowl, combine bran, 20 grams of corn starch, 100 grams of skim milk powder, 5 grams of sweetener and 5 grams of baking powder, as well as 3 grams of vanilla.
  7. Mix all ingredients and beat in 2 eggs and 1 yolk, mix again (without using a mixer).
  8. Add the dough to the dough and mix again.
  9. The resulting composition will be liquid, it is distributed into molds and baked for 20 - 30 minutes. Then leave them in the oven until completely cool.
  10. To prepare a special glaze, you will need to mix 10 grams of corn starch and 150 ml of milk, as well as 2 - 3 grams of sweetener. Mix well and put on low heat.
  11. Cook the glaze, stirring constantly to avoid the formation of lumps.
  12. When the mixture thickens, remove from heat and stir until warm, then spread on top of the cake.

Dietary Easter cake with protein

This cake is prepared in the following way:

  1. To form the dough, beat with a blender until smooth: low-fat cottage cheese (300 g), yogurt without fillers (400 g) and egg.
  2. Then add 120 grams of rice flour and 100 grams of oat (whole grain) bran, 5 grams of baking powder, 5 grams of sweetener, and vanilla to taste and 35 grams of protein. And then add chopped dried apricots and raisins.
  3. It is possible to add 1 large spoon of vegetable oil to the dough, but this is not necessary.
  4. Place the dough in special cake pans, filling them 2/3 full.
  5. Bake in the oven at 160° - 170°C for 1 hour.
  6. The glaze is prepared from 2 egg whites, 10 grams of vanilla and powdered sugar. Beat the whites with the remaining ingredients and place in a water bath and keep, stirring constantly, for about 4 - 5 minutes.
  7. The whites will warm up to 70ºC and thicken, the main thing is that no water gets into them. Then remove again and beat with a mixer until the mass doubles. Now the glaze can be applied to the cake.

Diet chocolate Easter

First you need to collect all the necessary products:

  • 40 g cocoa;
  • 90 grams of sugar;
  • 25 grams of pressed yeast;
  • 170 ml milk;
  • warm water to dilute cocoa;
  • 400 grams of wheat flour;
  • a pinch of salt;
  • 2 eggs;
  • 40 g butter;
  • 15 grams of vegetable oil;
  • lemon and orange zest;
  • 30 grams of chopped walnuts;
  • raisins or candied fruits to taste.

First, prepare the dough by heating the milk to 35°C. Mash the yeast, then pour in 100 ml of milk and add 1 large spoon of sugar, then add 30 grams of flour here and stir well.

1. We start by starting the reaction between kefir and soda. To do this, pour kefir into a bowl, add baking soda to it and set aside.

2. Soak dried fruits in boiling water and chop.

3. Scald the orange with boiling water to remove preservatives from the peel, dry it and grate the orange zest with a fine grater.


4. When bubbles have formed in the kefir, add one egg and one yolk to it. Cool the remaining egg white and save it for glaze.

Green buckwheat flour molds perfectly and holds its shape, unlike brown, fried flour.


To prepare we will need:

  • Corn flour – 140 gr.
  • Kefir – 1 glass
  • Egg – 1 pc.
  • Honey – 1 tablespoon
  • Soda – 1 teaspoon
  • Powdered milk – 1 teaspoon
  • Dried fruits – 50 gr.
  • Vanillin - on the tip of a knife

1. To raise the dough, we will use soda, pour it into kefir and start the reaction process.

2. In a separate bowl, mix flour with vanilla and pass through a sieve so that the flour is filled with oxygen. Do not add too much vanillin as... it can give bitterness.

3. Add the egg yolk to the kefir (put the white in the refrigerator), add honey and mix.

The following recipe assumes that we will prepare a diet cake without yeast, and also without the use of eggs and milk. The cake will have a banana-citrus taste, since it is prepared on the basis of bananas and orange juice. We measure the amount of ingredients in this recipe in glasses. This means that the volume of the glass is 200 g.

This diet cake recipe (with photos, step by step) can be used by those who follow the principles of vegetarianism. Even vegans will appreciate it - there is no need to use chicken eggs, we replaced them with bananas.

Ingredients:

  1. Corn flour - 2 cups
  2. Wheat flour - 2 cups
  3. Bananas - 2 pieces
  4. Orange juice - 1 glass
  5. Granulated sugar - 1 cup
  6. Vegetable oil - 2/3 cup
  7. Raisins - 100 g
  8. Baking powder - 1 pack
  9. Vanillin - 1 sachet

Dietary kefir cake is ideal for those who are allergic to eggs or do not consume this product for any other reason. This cake is prepared using poppy seeds and raisins.

The recipe uses regular white flour. If you wish, you can prepare a dietary oatmeal cake. To do this, instead of wheat flour, use oat flour or a mixture of white and oat flour (in equal proportions). You can prepare a dietary one. We have already published a detailed recipe. Here we note that in the recipe you can replace white flour with whole grain or oatmeal.

Ingredients:

  2. Brown sugar - 250 g
  3. Flour (mixture of white and whole grain) - 750 g
  4. Kefir - 640 ml
  5. Poppy - 25 g
  6. Soda - 1 tsp.
  7. Baking powder - 1 tbsp. l.
  8. Powdered sugar - 150 g
  9. Corn starch - 40 g
  10. Lemon juice - 1 tsp.

Remembering the sad events of the last week of the earthly life of Jesus Christ, people do all this with special diligence, and limiting themselves in joys. This also applies to food. Believers not only fast, but also do not touch food at all all Friday. But the holiday itself is celebrated on a special scale. In memory of the fact that Easter is preceded by a long 48-day fast, there should be 48 dishes on the festive table, but the main ones are pastries and eggs.

One of the attributes of the Easter table is various cookies. Traditionally, they are baked in the shape of a lamb. It was this animal that was sacrificed as a symbol of the fact that Jesus Christ was crucified in the name of the salvation of all mankind. In the Western tradition, Easter bunnies have a similar meaning. For the same reasons, the festive table should also include baked rabbit or lamb(sometimes a pig). This is especially true after a long fast without meat.

How to reduce the calorie content of Easter dishes

It's difficult to achieve delicious baked goods with low-calorie ingredients, but you can try. When preparing Easter cakes, flour, milk, cream and eggs are of particular importance. Experienced housewives do not recommend replacing wheat flour with other varieties. Those who watch their figure say that excellent Easter cakes are made from both rye flour and wholemeal wheat flour. As for eggs, it is better to take quail eggs rather than chicken. Firstly, it is prepared from cottage cheese, which already reduces its calorie content. Secondly, there is much more to the recipe for this dish from a dietary point of view. For example, you can use low-fat cottage cheese as the main component, and dried fruits as additives.

To reduce the sugar content in Easter products, it is recommended to replace it with fructose or honey.

To prepare meat dishes for the Easter table, it is better to opt for rabbit or veal. You can also pay attention to the variety of fish dishes, which are considered more dietary than meat dishes.

Diet recipes for Easter dishes

Dietary Easter with dried fruits and candied fruits

You will need: 1 kg of low-fat cottage cheese, 0.5 cups of sour cream, 150 g of butter, 100 g of powdered sugar, dried and candied fruits.

First, prepare the cottage cheese: put it under pressure for 3-4 hours to drain off excess liquid. Then rub it through a sieve. The butter is ground with powdered sugar and added to the cottage cheese. Sour cream, dried fruits and candied fruits are also placed there. Everything is thoroughly mixed, laid out in a special form, which is previously covered with damp gauze, and kept for 12 hours in the cold under oppression.

Easter diet with dried apricots and nuts

You will need: 0.5 kg low-fat cottage cheese, 4-5 tbsp. spoons of fructose, 150 g of dried apricots and nuts.

First, prepare dried apricots: fructose (2 tablespoons) is diluted in 150-200 g of water, add dried apricots and boil for 5 minutes over low heat. It turns out something like candied fruits, which are combined with nuts and ground in a blender. The cottage cheese is rubbed through a sieve, mixed with the nut-fruit mass and the remaining fructose. Line the bottom of the Easter box with damp gauze or cling film (so that the finished Easter can be easily removed), lay out the cottage cheese, making a hole in the middle. Pour the remaining nut-fruit mixture there and cover everything with cottage cheese. Place in the cold for 12 hours. Before serving, carefully remove the film.

Low-calorie Easter made from fermented baked milk

You will need: 2 liters of fermented baked milk and milk, 5-6 eggs, 350 g of sugar, 100 g of butter and 300 ml of sour cream.

Stir fermented baked milk, milk and sour cream. The yolks are separated from the whites and ground with sugar. Pour them into the milk mixture, put on fire and bring to a boil. Once the whey has separated, the mass is thrown onto cheesecloth and allowed to drain. After 2 hours, squeeze out, add should melt and become soft. Stir, place in beakers, and refrigerate for 12 hours. If desired, you can add dried apricots, raisins, and nuts to Easter.

Diet cake with kefir

You will need: 500 ml of kefir, 500 g of sugar, 3 chicken or 9 quail eggs, soda, vinegar, flour (how much dough will take). Dried fruits, candied fruits, nuts.

Mix kefir, eggs, soda, quenched with vinegar. Then you need to add flour, but this must be done carefully, in small portions, so that the dough is not thick, like for pancakes. Knead everything thoroughly so that there are no lumps. Prepare dried fruits and nuts that need to be chopped in a blender. Mix everything, pour into Easter cake molds and bake in the oven (180-200°C) for 40-45 minutes. To add beauty to the cake, you need to pour glaze on top. It can be made from melted chocolate with added butter, or you can simply use whipped egg whites.

Dietary custard cake

You will need:½ cup milk (1%), 1.5 tsp. dry yeast, 5 eggs, 3 tbsp. spoons of sugar, 2-3 cups of flour, raisins, dried apricots.

Boil milk and brew 1/3 cup of flour in it. The resulting dough is rubbed well so that there are no lumps. Then yeast is diluted in a small amount of warm milk and added to the brewed dough. Mix everything thoroughly and let it brew. At this time, grind the yolks with sugar. Egg whites (4 pcs.) are simply whipped into foam. All this is poured into the dough and kneaded. The resulting dough is left for 2 hours in a warm place to rise. It doesn't have to be cool. Then add melted butter to it, add chopped dried apricots and raisins, the remaining flour and knead thoroughly. The dough is divided into pieces, placed in molds and baked at 180-200°C. The finished cake is removed from the oven, allowed to cool and poured over the glaze. It can be made from the remaining protein.

Kulich without yeast

You will need: 300 ml milk, 75 g margarine, 500 g flour, 2-3 eggs, 1 cup sugar, ½ tsp. soda, dried apricots, raisins.

Melt the margarine in a water bath, cool and add the egg yolks, ground with sugar. Sift the flour, add the resulting yolk mass, warm milk, soda, quenched with vinegar and raisins. Knead well. Beat the whites separately and add them to the dough. Grease the Easter cake pans with oil, sprinkle with semolina or flour and place the dough in them. Bake Easter cakes at 180-200°C for 40-45 minutes. After they have cooled, the tops need to be poured with glaze, prepared either from proteins, or simply sugar.
