How to roll cucumbers for the winter:

  1. Trim the ends of clean cucumbers and soak for 2-3 hours.
  2. Shortly before the end of the specified time, prepare the remaining ingredients for canning.
  3. Peel the onion and divide into rings. Grind the garlic cloves with a press into a paste, or chop finely.
  4. Place a dill umbrella and garlic pulp on the bottom of clean jars. Fit the cucumbers, whole or in pieces, tightly.
  5. Cover the top with onion rings.
  6. Prepare the marinade by boiling water with salt and sugar. Add tomato, pepper, bay leaf. Finally, splash in the vinegar.
  7. Let it boil strongly and fill the jars. Cover with lids.

  1. Soak the washed cucumbers, with their ends cut off, drain the liquid and dry slightly.
  2. Sterilize the jars in any way (by pouring boiling water, in the oven, and other options).
  3. Place garlic cloves in jars. Next, place the soaked cucumbers.
  4. Fill the jars with boiling water and hold for ¼ hour so that the vegetables have time to warm up.
  5. Drain the cooled water into a saucepan. Measure its volume. If the filling turns out to be more than 2 liters, calculate how much spices you need to add.

  • Pickling set of leaves - horseradish, cherry, oak, dill umbrellas. Based on 1 piece. each type for 1 jar.

  • horseradish leaves or root.

Preparation:

Wash the cucumbers and tomatoes thoroughly and start cooking.



Cut off the tops of the cucumbers on both sides; they will not be needed. Next, cut the cucumbers into 2-3 cm pieces. If your cucumbers are young and small, you can not cut them, but put them whole or cut them into rings.


We cut the tomatoes into arbitrary pieces and pass them through a meat grinder. Peel the garlic, wash the horseradish with dill.



Place horseradish leaf, dill and garlic into clean jars. Fold the cucumbers as evenly as possible.

All this preparation will take some time. And just this time will be enough for cucumbers that settle in water. You may ask why keep cucumbers in water for pickling for the winter? And in order for them to be saturated with moisture, this will not lead to fermentation of already rolled cucumbers in tomato juice. Then, after removing them from the water, rinse them thoroughly with running, cold water.


Place 1/3 of the spices on the bottom of the jar (that is, two or three sprigs of dill and parsley, 2-3 black peppercorns, 1 allspice clove, cut the horseradish leaves into large pieces, throw some on the bottom of the jar, one currant leaf, one bay leaf, cherry leaf, chopped garlic, two or three slices of chopped capsicum, add it as desired, depending on what kind of spiciness you like), and then fill half the jar with cucumbers, I stack all the cucumbers standing, tightly next to each other, cut off the butts, then again the above layer of all the spices, then again the oranges and so on until the jar is full. Spices in the quantities I indicated, it is better to put only three layers in jars so that there is no overdosing with spices.


Then pour boiling water over the cucumbers, do this very slowly, in small portions, so that the jar does not burst, and to warm the bottom and walls of the jar, cover with a lid and leave for 10 minutes. At this time, add salt and sugar to tomato juice to taste, I add 1 tablespoon of salt and 3 tablespoons of sugar per 1 liter of juice, let it simmer slowly.


Drain the water from the cucumbers and put it back on the fire, and after boiling, pour the cucumbers again and leave for 10 minutes, covering with a lid. Drain the water very carefully so as not to get burned. Now the most important thing is that our preserves do not ferment; we add 1 aspirin tablet to a liter jar of preserves, i.e. acetylsalicylic acid (it must be crushed), which, in addition to everything, makes our pickled cucumbers in tomato juice crispy. And it completely preserves your preservation, without any sterilization. There will be no smell or taste from one tablet, believe me. If you do not want to use aspirin tablets, you can add half a teaspoon of citric acid per 1 liter of preserved food.


Then we pour the cucumbers with tomato juice, in which sugar and salt have already dissolved. I advise you to make tomato juice yourself, you will be confident in the naturalness of your preservation.

  • A leaf of currant, horseradish, cherry, an umbrella of dill;
  • A couple of cloves of garlic.
  1. First, I put cucumbers with spices in a jar, add salt and sugar and pour boiling water over them. I cover loosely with plastic lids. First, foam will appear on the surface; I remove it with a clean spoon. During the fermentation process, lactic acid appears in the brine, which gives vegetables a unique taste, promotes long-term storage and preserves the beneficial properties of the product. The brine will become cloudy after 3-5 days, and there will be a persistent smell of oxidation. This is normal, this is how it should be.
