Do not forget that all ingredients must be at room temperature, and the added butter must be melted and cooled. Buy high quality butter, not spread or margarine.

Yeast dough requires two approaches and two kneadings. If there are more batches or approaches, the dough will get confused and the baked goods will not be fluffy and porous. There is no universal recipe for bread machines and there cannot be, given the number of models available for sale. Before attempting any of the proposed cooking methods, make sure that the modes available in your device correspond to those required according to the recipe.
The first recipe is suitable for any bread machine that has the “French bread” operating mode. We do not give its exact parameters, since a difference of several minutes or degrees may be due to different technical characteristics of a particular device.

Ingredients:

  • milk, warmed - half a glass;
  • six tablespoons of sugar;
  • wheat flour - half a kilogram;
  • one hundred grams of dark raisins;
  • butter “Traditional” - 150 grams;
  • four large eggs;
  • dry granulated yeast - two and a half spoons;
  • ten grams of vanilla sugar;
  • fine salt - half a spoon.

For the white glaze:

  • one fresh egg white;
  • seven tablespoons of refined sugar and a pinch of salt.

Step-by-step recipe for Easter cake in a bread machine

For convenience, weigh the products in advance and arrange them in the order in which they are placed in the bread machine. Check the instructions for your device regarding the order of liquid and bulk components. If yours is the opposite of what is suggested, proceed according to the recommendations of the bread machine manufacturer.

From the operating modes control panel, select the already named “French bread”, the baking mass is 750 grams, the duration is 4 hours. The color of the crust, if such a parameter is available, indicate “Medium”; in fact, the cake should come out a little darker.

In the case of the device at our disposal, milk and eggs were sent into the container first. Next - butter, salt and both types of sugar.

Sort and scald the raisins ahead of time, then let them sit in a bowl of cool water for up to half an hour. After draining the water, place the berries in the bread machine.

Using a thin sieve, sift the flour into a spacious bowl, pour it into a container and sprinkle the yeast on top. Of course, we lower the lid and do not open it again until the program stops completely.

When the countdown shows that the cake has no more than ten minutes left to bake, release the egg white into a bowl, add salt to it and add sugar one spoon at a time.   • 60 milliliters of highly purified oil;
  • half a kilogram of flour;
  • one fresh egg;
  • vanilla sugar - thirty grams;
  • “fast” yeast - exactly 9.5 grams;
  • a glass of milk;
  • a spoonful of fine salt;
  • one hundred grams of raisins.

For the glaze:

  • powdered sugar, homemade - 100 grams;
  • white of one egg.

How to quickly cook Easter cake in a bread machine

Using a silicone pastry brush, lightly grease the bread maker container with oil. Carefully pour the milk heated to forty degrees into the container without washing off the oil from the walls, add the yeast and wait about ten minutes.

Rub the cottage cheese on a sieve or beat with a blender at low speed; be sure to sift the flour. After a sufficient number of bubbles have formed on the surface of the milk, shake the egg in a cup and pour it into the container. Lay out the cottage cheese, pour flour on top of it.

We select the “Basic” operating mode, indicate the crust color “Light”, and the size “Large”, corresponding to a nine-hundred-gram loaf. Pour salt, vanilla and regular sugar into different corners of the container. We start execution of the installed program.

We rinse and slightly soak the raisins, wait for the end of the initial kneading. We put the berries in the bucket at the signal, lower the lid and patiently wait for the baking to be ready.

We don’t take out the bucket of Easter cake right away, but let it cool a little with the lid open. Wait about five minutes, then the same amount before you turn the bucket over and remove the cake from it.

There shouldn’t be any difficulties in preparing the fudge, just beat the egg whites and sugar with a mixer and increase the speed gradually. Once covered with fondant, you can decorate with a design or just colored sprinkles.

Collect the yolks in a separate bowl, add sugar and mash. Using an elastic whisk, lightly beat the mixture and pour into a bucket. Using a fine-mesh sieve, sift the flour twice, scooping it with a spoon and scatter it over the liquid ingredients.

Sort the raisins and fill with water; scatter all other ingredients, excluding those intended for glaze, evenly over the flour. Program the bread maker to prepare “Sweet” or “French” bread in baking mode, select normal or dark crust color, weight - 900 grams.

If you don’t mind this addition in Easter cakes, soak dried cherries in cognac or liqueur. It’s very good if you still have time before the holiday, you can make the “liquor” yourself. Pour a glass of inexpensive brandy into two tablespoons of bulk sugar, a spoonful of vanilla and the same amount of burnt sugar. Stir slowly with a mixer for about five minutes and drain off the sediment. Pour over the berries, seal tightly and put in the refrigerator for several days. Ingredients:
250 ml milk,
50 g butter,

Easter cake in a bread machine with cottage cheese

Ingredients:

600 g flour,
220 g soft cottage cheese or curd mass,
3 eggs
2 tbsp. powdered milk,
2 tbsp. melted butter,
100 g raisins,
2 tsp dry yeast,
2 tbsp. honey,
a pinch of salt
water,
vanilla or cardamom - to taste.

Preparation:
Steam the raisins in hot water and place in a sieve. Break the eggs into a measuring cup, scramble them with a fork and add enough water to make a total of 300 ml. Pour into a bread machine, add dry milk, add cottage cheese, pureed through a sieve, melted butter, honey, salt and yeast. Turn on the kneading and baking mode for 3 hours, sift 500 g of flour and check how the bread machine kneaded the dough - if it turns out sticky, add another 100-150 g of flour. Pour the finished cake with egg white whipped with 100 g of powdered sugar.

Two recipes for Easter cake dough in a bread machine

I suggest you bake a very tasty, rich Easter cake with raisins. For those who don't have enough time, you can knead the dough in a bread machine, as I did. You can also knead by hand. It is better to bake Easter cakes from this dough in small molds.

To prepare Easter cake with raisins you will need:

Flour (highest grade) - 550 g;

Milk - 200 ml;

Butter - 100 g;

Eggs - 3 pcs.;

Salt - 1 tsp;

Sugar - 100 g;

Vegetable oil - 2 tbsp. l.;

Vanillin - 1 sachet;

Turmeric - a pinch;

Dry yeast - 7 g;

Raisins - 50-70 g;

Powdered sugar - 100 g;

Lemon juice - 1 tsp;

Multi-colored powder.

Make a well in the middle and add the yeast. Set the "Dough" mode (I have 1 hour 30 minutes).

While kneading the dough, add raisins at the signal. The dough can also be kneaded by hand. To do this, sift the flour into a deep bowl and make a well. Pour in yeast, add salt, sugar, vanillin, vegetable oil and turmeric. Pour in a mixture of warm milk, butter and yolks. Knead the dough so that it does not stick to your hands or the table. Then stir in the raisins. Leave the dough in a warm place to rise for 1 hour.

Fragrant Easter cake in a bread machine

I offer a recipe fragrant Easter cake from a very simple dough with dry, rapidly rising yeast. My dough was kneaded in a bread machine, but it is easy to knead by hand. The Easter cake is filled with dried apricots and prunes, sprinkled with a little cognac to enhance the taste. You can bake 2-3 large Easter cakes or about 10 small portions.

To prepare fragrant Easter cakes in a bread machine you will need:

Flour - about 4.5-5 cups;

Water - 1 glass;

Powdered milk - 2 tbsp. spoons;

Creamy margarine - 200 g;

Eggs - 2 pieces;

Sugar - 1 glass;

Vanilla - contents of 2/3 pod or vanilla sugar - 2-3 tbsp. spoons;

Dried apricots - 10 pieces;

Prunes - 10 pieces;

Cognac (rum or balsam) - 1 tbsp. spoon;

Yeast (for example, saf-moment) - 1 sachet (11 g).

Notes:

1. Instead of water and milk powder, you can use milk - 1 glass.

2. To make the paper forms better hold their cylindrical shape, they can be tied with thread.

3. When kneading by hand, the dough must be allowed to rise 2 times, i.e. after the first rise, you need to knead it and wait for its second rise, and then let it stand and rise in the molds.

Set the "fresh/yeast dough" mode.

To bake an even dome without distortion, it is recommended to stick wooden sticks into the center of the dough.
Bake the cakes in a preheated oven at 200 degrees, and the time depends on the size of the cakes (from 15-20 minutes for small ones, about half an hour for medium ones and up to 45 minutes - 1 hour for large ones), they should rise and brown.

The finished Easter cakes are covered with glaze and sprinkled with powder, i.e. decorate to taste.
